Assessment of the variability in protein content of cheese whey generated by Welsh cheese manufacturers using a combination of high performance liquid chromatography- mass spectrometry and immunological techniques.
Aberystwyth University, IBERS
Project ID: AUM70004
Annual Stipend: £11,937
Application Deadline: 13th June 2022
There is a growing market for novel protein products and bioactives, and the company Volac have identified an opportunity to produce value added peptide products from the low value whey side-stream generated by manufacturing cheese. Isolation of individual components can be added to formulations of food and beverages. This will require accurate time and cost-effective methods of analysis and an understanding of the variability of the protein content in cheese whey. This project will involve a novel approach to developing a comprehensive analytical method for the determination of proteins of interest in cheese whey that will include HPLC-MS, electrophoresis and immunological techniques. These will be applied to test a range of cheese whey samples obtained from Welsh cheese manufacturers.
